A smoky twist on the Pisco Sour template — mezcal's campfire character meets lime and agave nectar in an egg-white foam, with a dramatic Angostura art pattern on top for a cocktail that is as visually striking as it is complex.
Ingredients
- 1 ½ ozmezcal
- ¾ ozlime juice
- ½ ozagave
- 1egg white
- 3Angostura bitters
Steps
- 1.Combine all ingredients in a cocktail shaker without ice.
- 2.Seal and shake vigorously for 10–15 seconds to emulsify.
- 3.Add ice and shake again for another 10–15 seconds.
- 4.Strain into a chilled glass.
