Dry Shake, Then Shake With Ice
Dry shaking β without ice β emulsifies proteins in egg white or cream before the second shake with ice chills and dilutes. The result is a thick, stable foam that floats on top of the finished drink.
How To Dry Shake, Then Shake With Ice
- 1.Combine all ingredients in a cocktail shaker without ice.
- 2.Seal and shake vigorously for 10β15 seconds to emulsify.
- 3.Add ice and shake again for another 10β15 seconds.
- 4.Strain into a chilled glass.
