Sherry Sour

A low-alcohol sour using amontillado sherry as the base spirit, balanced by fresh lemon juice and simple syrup with an egg white foam. The nutty, oxidized character of the sherry makes this one of the most complex sours possible.

Steps

  1. 1.Combine all ingredients in a cocktail shaker without ice.
  2. 2.Seal and shake vigorously for 10–15 seconds to emulsify.
  3. 3.Add ice and shake again for another 10–15 seconds.
  4. 4.Strain into a chilled glass.
