A frothy agave sour where pineapple juice, lime, and agave meet tequila and egg white, shaken to a pillowy foam with a tropical, lightly vegetal edge and a bright finish.

  2. 2.Seal and shake vigorously for 10–15 seconds to emulsify.
  3. 3.Add ice and shake again for another 10–15 seconds.
